Write The substitution for the following ingredients. Write your answer on a separate piece of
paper.
1. 1 cup milk
2. 1 egg white
3. 1 tablespoon active dry yeast
4. 1 tablespoon cornstarch
5. 1 tablespoon A.P. flour
6. 1 cup sugar, granulated
7. 1 cup buttermilk or sour milk
8. 1 cup coffee cream (20 percent)
9. 1 cup whole milk
10.1 teaspoon baking powder

1 cup whole milk = ½ cup evaporated milk + ½ cup water
Egg whites: Aquafaba is the best option. Use 3 tablespoons for each egg white you want to replace.
1 teaspoon of yeast, you can use half a teaspoon of lemon juice and half a teaspoon of baking soda

1/2 cup evaporated milk plus 1/2 cup water OR 1 cup water plus 1/3 cup nonfat evaporated dry milk powder OR 1 cup skim milk plus 2 teaspoons melted butter can be substituted for 1 cup whole milk
To substitute for 1 teaspoon baking powder, combine 1/2 cup sour milk and 1/4 teaspoon baking soda.
