1. Fresh fish should have a mild scent and moist flesh, and appear freshly cut. Don't purchase fish that has a strong, fishy odor. Whole fish should have bright, bulging eyes and bright red or pink gills. Frozen fish should meet the fresh-smell test and have taut packaging with no evidence of ice or blood.
2.Mussels should smell like the ocean and sea air: briny and fresh. They should not smell overly fishy. The shells should be closed tightly. If you find any mussels in your bag with open shells, gently tap them on the counter, wait a minute, and see if they close.
