• White Stock is made from white meat or bones. The preparation for this stock usually takes five to six hours for meat and eight to ten hours for bones.
• Brown Stock is made with beef, veal bones and poultry meat. In this kind of stock, the bones should be roasted until golden brown in color but not burnt. Once the bones are roasted, cold water would be added again until boiled. Preparation for this takes eight to ten hours.
• Vegetable Stock is composed of vegetables. All parts of the vegetables are used for preparing this stock since they will not be eaten. The vegetable stock needs to be simmered for only 30 to 45 minutes because they are just soft and that is why it is the easiest stock to prepare.
• Fish Stock is limited because fish produce different kinds of stock. Some produce better quality of stock than the other fish. Preparation takes almost one hour.
