I'll be arriving at Grand Central station in the morning but from there im quite confused how to proceed. Ive been told that there is a shuttle that goes from Grand Central to Penn and once there i can take trains to the stadium? Any information you can provide would be greatly appreciated as well as a possible time estimate from Grand Central to the Stadium if i go all by train.

There is no shuttle to get to Penn Station. What you have to do is take the 42nd Street Shuttle to Times Square and then take the Brooklyn-bound 1, 2, or 3 trains to 34th Street-Penn Station. From there, take any NJ Transit train to Secaucus Junction and transfer to a special train that goes to the Meadowlands.

Since you're coming from Grand Central, here's how to get from there to the Meadowlands.
Step 1 - from Grand Central, take the 42nd Street Shuttle (Black Line on the subway map) westbound to Times Square.
Step 2 - at Times Square transfer to the #1, 2 or 3 subway line (Red Line). Take either downtown (southbound) train from Times Square to Penn Station.
Step 3 - at Penn Station, exit the subway into the train station and follow the directional signs to the NJ Transit Concourse. Purchase a round trip ticket (two one way tickets) and take any westbound NJ Transit train from Penn Station to Secaucus Junction, where you can then transfer to a shuttle train to the Meadowlands Sports Complex.
When taking the train from Penn Station, please make sure the destination on the departure board has the initials "SEC" displayed next to the train number. "SEC" stands for Secaucus Junction.
A round trip ticket on NJ Transit from Penn Station to Secaucus Junction, which includes the transfer to the shuttle train will cost $4.25. Please buy you ticket at Penn Station before boarding because fare are higher on board.
The fare on the subway is $2.25 one way ($4.50 round trip) and the transfer between subway line are free.
The entire trip from Grand Central to the New Meadowlands Stadium take around 30 to 35 minutes each way. However, its better going by train than driving, which takes about 1 to 2 hours and is more expensive.

Are you coming from Metro-North Railroad?
If you're coming from New Haven Line, MTA Metro-North and NJ Transit offers direct Meadowland Service from New Haven Line to Seacus Junction via New York Penn Station during pre games and after games.
At Seacus Junction, follow the sign to Meadowland Shuttle.
If you're returning on same day, purchase your roundtrip because there is no MTA Ticket Vending Machines available at Meadowland Station or Seacus Junction.
If you're coming from Harlem and Hudson Lines:
Take 42nd St Shuttle or Times Sq-bound (7) train to Times Sq.
Transfer to downtown (1)(2)(3) train one stop to 34th St-Penn Station.
Then transfer to New Jersey Transit via SEC to Seacus Junction for Meadowland train service.
