The CEO of the company I work at hasn't responded to my connection request that I sent a few months ago. I forgot about it and just realised now. She has accepted invitations from other colleagues and she clearly is an active premium member on LinkedIn. We have spoken a couple times in person. Should I just cancel my request? I don't think she'll respond, she must be avoiding my request to connect. I'm just a lowly apprentice after all. It would be nice to have her in my lost of connections though.

For CEOs, they often don't manage their LinkedIn accounts, but have their executive assistant do it for them. If the executive assistant doesn't recognize your name as being one of the CEOs peers, mentees, or direct reports, he/she probably will ignore your request.
So yes, if you can cancel the request, go ahead and do so.
Maybe you should just cancel it.
