So when I boot into recovery and I choose factory reset it reboots with the same ROM. Is it not supposed to get rid of the ROM? Should I just install the zip for the new ROM? What would happen if I just deleted the rom im using from es file explorer?

Trying to switch ROMs on gs3 but factory wipe wont get rid of the ROM?
A factory wipe is only good to reset the phone back to straight out of package. If you want to change ROMs, it has to be done through a ClockWorkMod Recovery, or through the ODIN mode of the phone using a Cyanogenmod ROM. Cyanogenmod ROMs are available out there. I recommend checking the XDA Forums for both ROMs and instructions on changing your ROM out.
factory wipe does not chage to previous rom it only resets the default settings .... to get back the original rom search your firmware files in google and flash it with odin ..
you will get many you tube videos for flashing a stock or any custom rom through odin
You cannot "zip" a ROM. ROM is "read only" memory, and cannot be flashed or changed unless you actually unsolder the ROM chip and change it....
