Brussels sprouts can be an acquired taste for some. But I love them. They are sort of a cabbage / broccoli thing. A little on the bitter side if you don't cook them right.
My favorite way to cook them is to crisp up some really good bacon, and then braise the sprouts (peel of top older leaves, trim the stems, cut larger ones in half) in a tablespoon or so of the reserved bacon fat and some water. When fork tender, (and water is just about gone - you may have to add some water towards the end) I add fresh ground pepper to taste, a little pat of butter, and then sprinkle the crisped chopped bacon over the top.
