When you treat others as subjects, it means that there are oblige to follow specific rules or instructions by you. People treated as subject needs to obey rules executed by you. They are under your authority. Usually, they can't defend themselves or object to what you want them to do. Since they are your subject, they usually don't have the capability to express themselves. All they do is follow you, do whatever you told them to do.
This is mostly not a good thing and definitely not ethical because you are violating a person's will to do or say what they want. But if you're treating a person as a subject because of a study or with the consent of the other person, that can be okay.
