Why do you think bakers use an oven when baking?
1.The oven sets and maintains the proper conditions of heat flux, humidity, and temperature to carry out the baking process and the removal of moisture from the products.

2.Can I put ice cream in the fridge instead of the freezer? For how long would that be healthy for the product?
If you would prefer to drink your ice cream as a liquid then you can put it in the fridge. As Jennifer Quail explained it will melt. How quickly this happens will depend on the temperature of the fridge and the size of the ice cream container.
In terms of it remaining safe to eat, I would think it would last longer than milk but not as long as yogurt. It might start to sour or grow bacteria within a week or two. (This would depend on the ingredients and how it was made.)
If you let it melt in the fridge then refreeze it later, you will find it has a different texture. It could develop ice crystals or become super solid.
I recommend keeping it in the freezer.
