Carrots' bright orange colour comes from beta-carotene, which acts as an antioxidant and is converted to vitamin A in your body (white and yellow carrots have less beta carotene; in yellow and purple carrots, lutein represents almost half of the total carotenoids).
For centuries, almost all carrots were yellow, white or purple. But in the 17th century, most of those crunchy vegetables turned orange. Why? ... In the 17th century, Dutch growers cultivated orange carrots as a tribute to William of Orange – who led the the struggle for Dutch independence – and the color stuck.
