Well, for the pole vault in particular, it was a change in technique called the Fosbury Flop. Prior to this guy Fosbury, everyone went over the top pole forward, or by scissor kicking, or whatever. Fosbury realized he could get his body to clear the bar more effectively if he rolled over it backwards. The physics is a bit weird, but what it boils down to is that this technique changed the sport on a fundamental level, and now you virtually never see anyone pole vault without this technique.
